Buttermilk Mickey-shaped Pancakes

The Best Buttermilk Mickey-shaped Pancakes

Fluffy and buttery, and in the shape of our favorite mouse, these Mickey-shaped pancakes are sure to please at breakfast time. Or anytime!

Ingredients

  • 2.5 cups all purpose flour
  • 3 tbsp sugar
  • 2 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2.5 cups buttermilk
  • 8 tbsp butter ((1 stick, melted))
  • 2 eggs ((white and yolks separated))
  • 1 tbsp butter ((for pan or griddle))
  • chocolate chips or blueberries ((optional))
  • maple syrup ((for serving))

Instructions

  1. In a large mixing bowl, combine the flour, sugar, salt, baking powder, and baking soda, whisking together to combine.
  2. In a medium-sized bowl, combine the buttermilk, melted butter, and eggs yolks, whisking together to combine.
  3. Add the buttermilk mixture into the dry mixture. Fold together with a rubber spatula (or gently mix with a fork) until combined. Take care not to overmix – lumps are just fine!
  4. Add the egg whites to your batter and mix them in, again taking care not to overmix.
  5. Let batter rest for 30 minutes. (15 minutes minimum.) Cover with lid, if your mixing bowl has one, or use cling wrap.
  6. Watch an episode of Star Wars: The Clone Wars on Disney+ while you wait.
  7. Add 1 tbsp of butter to cast iron skillet (or electric griddle) and use medium-low to medium heat. Once the butter is melted and bubbling, reduce heat to medium-low.
  8. Scoop about 1/4 cup batter onto skillet, forming it into a round shape (Mickey's head). With a regular spoon, dollop two heaping portions onto the skillet for Mickey's ears. Make sure they connect to, or overlap with, the initial round. You can use the spoon to try and shape the batter if need be. (Note: Messy Mickeys still taste good!)
  9. Cook for 2 to 3 minutes, or until bubbles start to form and pop on the pancake's surface. (If desired, add chocolate chips or blueberries now for a smiling Mickey face!) Carefully use a spatula to flip the pancake and cook another 1 to 2 minutes, until golden brown.
  10. Serve your delicious Mickey pancakes with syrup, whipped cream, peanut butter, or any topping your heart desires.
