With gargoyles guarding the entrance and giant wooden doors that seem to transport you into another world, walking into Gideon’s Bakehouse feels like walking right onto the set of a Harry Potter movie. Couple that with the delicious smell of cookies wafting through the air, and it’s fair to say that Gideon’s is a bakehouse like no other!
A Victorian Influence
The inspiration behind Gideon’s Bakehouse is just as sweet as the cookies they make. The owner of the bakehouse, Steve Lewis, purchased a cookbook from 1898 that happened to be filled with notes and doodles from a young aspiring baker named Gideon. As you can guess, the owner decided to fulfill the young boy’s dreams by naming his bakehouse after him.
Gideon’s influence doesn’t end there, though. The owner went on to use the boy’s story as inspiration for the design and decor of the bakehouse. Drawing upon Victorian and Gothic themes, he filled the bakehouse with books, works of art, and antiques from the Victorian era. This unique blend of history and sweet treats initially led to a storefront at East End Market in Central Florida. Since then, Gideon’s influence has continued to spread and can now be felt at Disney Springs!
Delicious Creations
Half Pound Cookies
Gideon’s Bakehouse is most famous for its cookies. Each weighing in at almost half a pound, these handmade cookies take over 24 hours to make and are filled with the most delectable ingredients. You can find several flavors, including classics such as Chocolate Chip and Cookies & Cream, as well as creative creations like Peanut Butter Crunch and Pistachio Toffee Chocolate Chip.
Our top recommendation, though, is to give their Coffee Cake Cookie a try. Available only at Disney Springs, this vanilla bean cookie is filled with cinnamon strudel and toppled with double-baked butter crumbs. It’s a fan favorite offered daily. However, it does sell out quickly, so be sure to get there early if you want to give it a try!
During the holidays, you may even be lucky enough to find a few festive seasonal favorites. Stop by in December to pick up Santa’s White Christmas Cookie, a white chocolate chip cookie baked with hints of coconut, caramel, vanilla, nuts, and white coffee beans. Or swing by in October to pick up the widely popular Frankenstein – made from crushed Oreos and chocolate pieces, this cookie is topped with M&Ms.
Also worth mentioning is Hot Cookie Hour. Beginning every evening at 7:00 pm, you can indulge yourself with a classic Chocolate Chip Cookie directly from the oven. Choose to savor it as is or add a dollop of homemade ice cream – the choice is yours!
Double Frosted Cake Slices
If you’re craving something even sweeter, then you’ll want to grab a slice (or two) of their double frosted cakes. These three-layer cakes come covered in not one but two layers of buttercream frosting! Flavors rotate daily, but if you can, we recommend that you try to get your hands on their new Hazelnut Mocha Double Frosted Cake. This chocolate cake is covered in hazelnut mocha frosting, then topped with coffee frosting and sprinkled with crushed hazelnut – it’s the ultimate coffee lover’s dessert.
For something extra special, stop by during the holidays for seasonal specialties. One fan favorite during the fall is the Spiced Pumpkin Caramel Double Frosted Cake. As the name suggests, this vanilla cinnamon cake is topped with pumpkin and salted caramel frosting, a combination that is sure to satisfy all your fall cravings!
Nitro Cold Brews
The perfect pairing for a perfect dessert is no doubt an ice-cold coffee brewed to perfection! These cold brews, which are available exclusively at the Disney Springs location, come in three different flavors. There’s the Classic White, the Peanut Butter, and the Ginger Snap. While the Classic White Brew pairs well with any dessert on the menu, the Peanut Butter Brew should be your go-to companion for anything and everything chocolate. For those who are lucky enough to snatch up one of the famous Coffee Cake Cookies, consider pairing it with the Ginger Snap Brew – it makes for the perfect combination!
Tips for Your First Visit
Our best piece of advice for first-time visitors to Gideon’s Bakehouse is to get there early! Doors open at 10:00 am, but the line for entry begins to form as early as 9:00 am. When the line gets too long, staff will set up a virtual queue that you can sign up for at the front door. This allows you the freedom to explore Disney Springs while you “wait in line.”
Wait times for the virtual queue can run anywhere from two to five hours, so feel free to wander far and wide – don’t worry, you won’t lose your spot. When it’s your turn to enter the bakehouse, you’ll receive a text. Sign up for the queue typically ends around 6:00 or 7:00 pm, so be sure to arrive before dinner at the very latest.
When you finally make your way into the bakehouse, take your time and make sure to choose wisely! There’s a limit of six cookies and two limited edition desserts per person, so you’ll want to get this right, trust us! Daily cake selections are made randomly and are not listed on their website, but they promise to offer two to four flavors a day.
